1 kilogram Nectarine
4 shallots
2 Tbsps freshly grated ginger
100 grams raisins
100 grams cane sugar
¼ l White vinegar
1 chili pepper
1 generous pinch Turmeric
2 centiliters Cognac

Preparation steps

1.

Blanch nectarines in boiling water, peel, pit and cut into pieces. Peel shallots  and chop finely.

2.

Combine nectarines and shallots with ginger, raisins, sugar, vinegar, chopped chile pepper and turmeric. Bring to a boil in a saucepan, stirring constantly. Simmer  for about 20 minutes Add cognac and stir well. Pour into preserving jars and seal well.

3.

Turn jars upside down and cool. Return to normal position and store in a cool, dark place. Serve as needed.
