2 centimeters fresh ginger
2 onions
1 chili pepper
3 Lime leaves
270 milliliters apple cider vinegar
150 milliliters Orange juice
1 tsp Coriander
300 grams cane sugar

Preparation steps

Make crosswise cuts on apricot skins, blanch, peel, halve and pit. Cut apricots into quarters and cut 1/3 of apricots into small pieces. Peel ginger and onion and chop finely. Rinse chile pepper and cut into thin rings. Rinse lime leaves and cut into fine strips.

Combine all ingredients in a saucepan and heat over low heat, stirring. Simmer on medium heat for about 40 minutes, stirring. Pour into prepared preserving jars and seal well. Place jars upside down to cool. Return jars to upright position and serve chutney as desired. Tip: To preserve the chutney for longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
