250 grams Basmati rice
1 pc ginger (2 cm)
1 stalk Lemongrass
500 milliliters Chicken broth
4 cloves
1 tsp Sambal oelek
½ tsp Turmeric
1 tsp Cumin
1 pinch cinnamon
2 eggs
salt
3 Tbsps vegetable oil
Bell pepper (1 each red and green)
150 grams ham
150 grams small peeled and cooked shrimp
3 Tbsps sweet soy sauce

Preparation steps

Rinse rice in a sieve under running water and drain. Peel the ginger and cut into thin slices. Rinse the lemongrass and cut into 2 cm (approximately 3/4 inch) pieces. Add both with the chicken broth, cloves, Sambal oelek, turmeric, cumin and cinnamon into a pot. Stir, bring to a boil and cook over very low heat until the rice has expanded. Then remove lemongrass and clove.

Meanwhile, whisk eggs with 2 tablespoons water and season lightly with salt. Heat 1 tablespoon oil in a non-stick pan. Add the egg mixture to the pan and let stand until cooked and thickened. Remove from pan and let cool.

Rinse the peppers, trim, cut in half, remove seeds, remove all white membranes and cut into thin strips. Finely dice the ham.

Heat the remaining oil in the pan. Saute the ham with the peppers 4 minutes. Add the shrimp and rice, season with salt and soy sauce. Cut the omelette into thin strips and mix gently into the rice. Cover and heat briefly and serve.
