- 4 Steak fillets about 200 grams (approximately 7 ounces)
- coarsely ground Pepper
- 2 teaspoons Clarified butter
- 1 Egg
- freshly ground Pepper
- 3 tablespoons whole grain Mustard
- 2 tablespoons Breadcrumbs
Season the fillets with pepper and sear in hot clarified butter for about 2 minutes on each side.
Whisk the egg in a double boiler or heatproof bowl over a saucepan of simmering water. Season with salt and pepper and stir in the mustard and breadcrumbs.
Spread the mixture onto the fillets and bake in an oven preheated to 200°C (approximately 400°F) for 5-7 minutes.
Remove from the oven and serve with your choice of sides.
