4 Steak fillet about 200 grams (approximately 7 ounces)
coarsely ground peppers
2 tsps clarified butter
1 egg
salt
freshly ground peppers
3 Tbsps whole grain Mustard
2 Tbsps breadcrumbs

Preparation steps

1.

Season the fillets with pepper and sear in hot clarified butter for about 2 minutes on each side. 

2.

Whisk the egg in a double boiler or heatproof bowl over a saucepan of simmering water. Season with salt and pepper and stir in the mustard and breadcrumbs. 

3.

Spread the mixture onto the fillets and bake in an oven preheated to 200°C (approximately 400°F) for 5-7 minutes. 

4.

Remove from the oven and serve with your choice of sides.
