- 1 red onion
- 2 Tomatoes
- 1 handful fresh Basil
- 4 Tbsps olive oil
- 2 Tbsps White vinegar
- 250 grams Mozzarella
- salt
- peppers (from the mill)

Preparation steps

Peel the onion and chop finely. Rinse the tomatoes, remove the stalks and cut into very small cubes. Rinse the basil, shake dry and also cut very small. Mix all ingredients in a bowl with the olive oil and the vinegar. Drain the mozzarella and cut into slices.

On a plate, arrange the mozzarella in overlapping layers. Sprinkle with a little vegetable marinade and season with salt and pepper. Transfer the remaining vegetable marinade in a bowl to serve on the side.
To serve: Accompany with a rice salad and bean puree.
