2 Leeks (halved lengthways)
4 carrots (halved lengthways)
4 Parsnips (halved lengthways)
cup vegetable stock
½ cup Crème fraiche
2 eggs
1 Tbsp coarse Mustard
1 cup Cheese (e. g. Cheddar; grated)

Preparation steps

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.

Cut the vegetables to fit the baking dish and layer them in the dish. Season with salt and ground black pepper and add the stock. Cook for around 15 min turning occasionally. If necessary add some more stock. Turn the oven up to 200°C (180°C in a fan oven), 400°F, gas 6.

Mix together the creme fraiche, eggs and the mustard, season with a little salt and, when the liquid has evaporated and the vegetables are done, pour into the baking dish. Sprinkle with the grated cheese and bake for 10-15 min until golden brown.
