Preparation steps

1.
Cook the couscous according to the packet instructions and fluff up with a fork.
2.
Mix the oil and lemon juice together to make a dressing and season with salt and pepper.
3.
Sir all the remaining ingredients, except for the mint leaves, into the cousous along with the dressing. Mix well and serve the salad garnished with mint leaves.
