For servings

½ cupsdried wood ear mushroom
1 clovegarlic finely chopped
¾ inchesfresh Ginger root finely chopped
2 tablespoonsNut oil
2carrots halved lengthways and sliced, using a decorative knife if desired
3 cupsyoung White cabbage sliced
2onions cut into wedges
2red peppers sliced into strips
2zucchini cut into two or three lengthways and sliced, using a decorative knife if desired
Bamboo shoot sliced, drained
2 tablespoonslight soy sauce

1 Soak the mushrooms according to the instructions on the packet then drain well and slice into strips.
2 Briefly fry the garlic and ginger together in oil in the hot wok. Add the carrots and cabbage and stir fry for around 1 minute. Gradually add the remaining ingredients: first add the onion, stir fry for one minute then add the peppers, courgette, bamboo shoots and mushrooms. Fry together for 1-2 minutes until cooked.
3 Season to taste with soy sauce, salt and ground black pepper, then serve.
