- ½ cup dried Wood Ear Mushrooms
- 1 clove garlic cloves (finely chopped)
- ¾ inch fresh ginger (finely chopped)
- 2 Tbsps Nut oil
- 2 carrots (halved lengthways and sliced, using a decorative knife if desired)
- 3 cups young White cabbage (sliced)
- 2 onions (cut into wedges)
- 2 red peppers (sliced into strips)
- 2 Zucchini (cut into two or three lengthways and sliced, using a decorative knife if desired)
- Bamboo shoots (sliced, drained)
- 2 Tbsps light soy sauce

Preparation steps

Soak the mushrooms according to the instructions on the packet then drain well and slice into strips.

Briefly fry the garlic and ginger together in oil in the hot wok. Add the carrots and cabbage and stir fry for around 1 minute. Gradually add the remaining ingredients: first add the onion, stir fry for one minute then add the peppers, courgette, bamboo shoots and mushrooms. Fry together for 1-2 minutes until cooked.

Season to taste with soy sauce, salt and ground black pepper, then serve.
