2 Mangoes (peeled, stoned and flesh chopped)
juiced lemons
3 Tbsps vegetable oil
2 onions (sliced)
2 cloves garlic cloves (chopped)
2 red chili peppers (deseeded and chopped)
1 Tbsp fresh ginger (chopped)
2 Tbsps red Curry paste
3 cups vegetable stock
1 medium Cauliflower (broken into florets)
14 ozs frozen peas
1 Tbsp Mango chutney
Lemon balm (to garnish)
Mango chutney (to serve)

Preparation steps

1.
Mix the chopped mango with the lemon juice and set aside.
2.
Heat the oil in a large pan and gently cook the onions until soft but not brown. Add the garlic, chillies and ginger, cook for 2 minutes then stir in the curry paste.
3.
Add the stock, bring to a boil then add the cauliflower and simmer for 10 minutes. Add the peas, season with salt and pepper then simmer for 5 minutes and stir in the mango chutney.
4.
Chop a few leaves of lemon balm, scatter over the curry and serve in warmed bowls with a lemon balm sprig to garnish and mango chutney alongside.
