200 grams mixed Lettuce (such as headers, oak leaf, Bataiasalat, arugula, dandelion)
½ bunch mixed Fresh herbs (such as mint, lemon balm, cilantro, basil)
2 red paprika
2 ripe Tomatoes
6 Date (dried, pitted)
1 ripe Apple
For the dressing
4 Tbsps white balsamic vinegar
4 Tbsps olive oil
1 tsp spicy Mustard
1 tsp honey
salt
freshly ground peppers
3 Tbsps Vegetable broth
also
50 grams Pine nuts (toasted, for sprinkling)

Preparation steps

Rinse and dry the lettuce. Separate the individual leaves, then tear into bite-sized pieces. Rinse and dry the herbs, then emove the leaves from the stems. Rinse and halve the peppers. Remove the seeds and membranes, and finely dice. Rinse and halve the tomatoes. Remove the cores and seeds, then finely dice.

Quarter the dates. Peel the apples, remove the seeds, then finely dice. Drizzle the apple pieces with a little vinegar. Combine all the ingredients for the dressing in a shaker. Mix well, then drizzle over the prepared salad ingredients. Mix thoroughly and transfer to plates. Sprinkle with the pine nuts, and serve immediately.
