- For the pastry
- 1 ⅓ cups Chickpea flour
- 1 pinch salt
- ⅓ cup powdered sugar
- 1 Tbsp olive oil
- ½ cup water (approx)
- Rice flour (for dusting)
- For the filling
- 6 Date (chopped)
- 1 Apple (peeled, cored and chopped)
- 1 tsp ground cinnamon
- ¼ tsp grated Nutmeg
- 1 Tbsp honey (more if needed)
- To glaze
- milk
- To decorate

Preparation steps
1.
Heat the oven to 180°C (160° fan) | 350°F | gas 4. Line a large baking tray with non-stick baking paper.
2.
For the pastry: mix together the flour and icing sugar in a mixing bowl and gradually add the oil.
3.
Add the water slowly until a dough starts to form. If too wet, add more flour and/or rice flour to form a soft dough..

For the filling, put all the ingredients into a food processor and blend until combined, but still with some texture.
5.
Break off a small piece of dough and roll it into a ball. Press between sheets of non-stick baking paper into a disc.
6.
Add a teaspoon of filling and then fold and seal well. Repeat with the remaining dough and filling.
7.
Place on the baking tray, brush with milk and bake for about 15 minutes until golden. Sprinkle with sugar while hot, then place on a wire rack to cool completely.
