½ Lollo rossa
½ Loose leaf lettuce
1 Red yellow onion
100 grams young Gouda
100 grams Mountain cheese
2 Tbsps Walnut oil
1 Tbsp Lime juice
2 Tbsps apple cider vinegar
½ tsp honey
salt
freshly ground peppers
50 grams Walnut

Preparation steps

Rinse salad greens, spin dry and tear into small pieces. Peel, halve and slice onion into thin rings. Cut Gouda into about 1 cm (approximately 1/2 inch) cubes. Cut mountain cheese into about 1/2 cm (approximately 1/4 inch) cubes. Mix oil with lime juice, vinegar, honey and 1-2 tablespoons water and season with salt and pepper.

Mix salad greens with the dressing and serve sprinkled with cheese, onion rings and nuts.
