- 1 cup porridge oats
- ¼ cup Amaranth
- 1 ½ cups Shredded coconut
- ⅔ cup plain flour
- ½ cup caster sugar
- ½ cup butter
- 1 Tbsp Golden syrup
- 1 tsp baking soda
- 2 Tbsps boiling water

Preparation steps
1.
Heat the oven to 180C, fan 160C, 350F, gas 4. Grease a large baking tray.
2.
Put the oats, amaranth, coconut, flour and sugar in a bowl.
3.
Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to the boiling water, then stir into the golden syrup and butter mixture.
4.
Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
5.
Drop dessertspoonfuls of the mixture on to the baking tray, about 2.5cm|1inch apart to allow room for spreading. Bake for 8-10 mins until golden. Transfer to a wire rack to cool.
