- 1 ⅔ cups Whole wheat flour
- 2 ½ cups wholegrain Rye flour
- ½ cup fine rolled oats
- 1 teaspoon Caraway (ground)
- ¾ ounce Yeast (OR 7 g dried yeast)
- 1 teaspoon salt
- 5 ounces Natural Sourdough
- all-purpose flour (for working the dough)
Preparation steps
1.
Mix both flours with the oats and caraway in a bowl. Make a well in the centre and add the yeast (if using fresh yeast, break it up into small pieces). Stir in around 50 ml of lukewarm water, cover and leave for around 30 minutes for the yeast to start working.

Add the salt, the sourdough and approx. 350 ml lukewarm water and knead together until the dough comes away from the sides of the bowl. Cover and leave for a further 30 minutes to rise.

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with grease-proof paper.
4.
Thoroughly knead the dough once more, divide into roughly 15 pieces and form each into a ball. Place on the baking tray and bake for around 25 minutes until golden brown. Remove from the oven and put on a cooling rack to cool.
