3 ½ ounces sliced Bread
1 cup warm milk
5 tablespoons Oil
2 shallots (chopped)
28 ounces Cod (finely chopped)
3 eggs (beaten)
1 tablespoon chopped Dill
2 tablespoons chopped parsley
salt
peppers
breadcrumbs (if required)

Preparation steps

1.
Soak the bread in the warm milk.

Heat 2 tablespoons oil in a frying pan and fry the shallots until soft.
3.
Squeeze out the excess liquid from the bread and put into a bowl with the shallots, fish, eggs, herbs, salt and pepper to taste and mash to a purée. If the mixture is too soft, add some breadcrumbs. Shape the mixture into bite-sized patties.
4.
Heat the remaining oil and fry the patties in batches, for about 3-4 minutes on each side, until golden brown. Serve on cocktail sticks.
