- sunflower oil
- 1 onion (finely chopped)
- 5 cloves garlic cloves (minced)
- 2 cups chopped Tomatoes (tinned)
- 1 Tbsp sugar
- 2 Tbsps balsamic vinegar
- salt
- 1 tsp paprika
- 2 tsps cayenne pepper
- 4 eggs
- 4 Wheat Tortillas
- butter
- soft fresh Cheese

Preparation steps
1.
Heat 3 tbsp oil in a deep frying pan and sweat the onion and garlic until translucent. Add the tomatoes, sugar and vinegar, cover and simmer over a low heat for 5-10 minutes. Season with salt and add cayenne pepper and paprika to taste.

Break the eggs carefully onto the sauce. Simmer the sauce over a low heat (without a lid) until the egg whites are set. Season the eggs with a little salt.

If you wish, crumble the soft cheese and scatter over the Huevos Rancheros before serving.
4.
Heat a little oil in a nonstick frying pan and toast the tortillas on both sides. Serve with the Huevos Rancheros.
