- 1 honeydew melon
- 125 grams Blackberry
- 125 grams Blueberries
- 50 grams sugar
- 75 milliliters dry Red wine
- powdered sugar (as needed)
- mint (for garnish)

Preparation steps
1.
Cut the melon in half, scrape out the seeds with a spoon, cut the flesh into small slices and cut through the shell. Arrange the slices of melon on dessert plates and chill.

Gently brush the blackberries and blueberries, rinse and allow to drain well or pat dry. Sort about 2 tablespoons of berries and reserve for garnish.

Caramelize the sugar over heat until golden brown. Deglaze with the wine and cook the caramel. Stir in the fruit and leave to simmer for about 5 minutes, stirring occasionally, until all the berries are soft and burst. Press the berry mixture through a fine sieve and sweeten with powdered sugar as needed. To serve, let sauce cool to lukewarm, then pour over the melon wedges and garnish with reserved berries and mint.
