- 2 Chicken breasts (with skin)
- ½ muskmelon
- 1 Tbsp honey
- 1 Tbsp light soy sauce
- 100 milliliters chicken stock
- 2 Tbsps vegetable oil
- 2 Tbsps Lime juice
- 1 Tbsp Sesame seeds
- 1 generous pinch Italian Fresh herbs (or 400 grams dried)
- 2 scallions

Preparation steps
1.
Rinse the chicken breasts, pat dry and place in a greased baking dish or on a baking sheet. Mix soy sauce and honey and coat the chicken breasts. Pour in chicken stock and cook for about 15-20 minutes at 160°C. Remove chicken and let cool slightly, then slice.

Peel melon, cut in half, remove the seeds, cut into very thin slices and serve with the sliced chicken breasts decoratively on plates.

Rinse and trim scallions and cut into diagonal rings.
4.
Roast sesame seeds in a pan without oil. Pour in the chicken sauce, then add scallions, herbs and lime juice. Pour this sauce over the chicken melon salad.
