1 red onion
1 pc Watermelon (800 grams)
1 lemon
4 Tbsps olive oil
1 Tbsp honey
salt

4 stalks mint (for garnish)

Preparation steps

1.

Toast pine nuts in a dry skillet until fragrant. Remove from pan and let cool.

2.

Rinse arugula, trim and spin dry. Peel onion and cut into rings. Peel melon and cut into bite-size pieces.

3.

For the vinaigrette, squeeze juice from lemon and mix in a bowl with olive oil and honey. Season with salt and pepper.

4.

To serve, arrange arugula, melon and onion in 4 small bowls, sprinkle with pine nuts and drizzle with vinaigrette.

5.

For the garnish, rinse mint, shake dry, pluck leaves and sprinkle over the salad.
