Arugula Salad with Melon
Rinse the arugula, drain and cut off the coarse stalks. Rinse and finely chop the scallions.
For the dressing, mix the oil with the lime juice and season with salt and pepper. Mix with the arugula and scallions.
Cut the melon into quarters, remove the seeds and peel. Cut the flesh into columns and arrange on plates with the arugula salad. Serve with slices of salami.
