3 ½ cups cassis (black currants)
cup Champagne
0.333 cup sugar
3 Tbsps honey
1 egg white (beaten)
Violet (to garnish)

Preparation steps

1.

Place the berries, 3 ounces of champagne and the sugar in a pot and crush with a potato masher. Leave to steep for 20 minutes, then cover with a lid, and bring to a boil. Simmer for around 5 minutes and then sieve. Stir in the honey and leave to cool.

Fold in the egg white and the remaining champagne and freeze in an ice cream maker.

Serve garnished with violets.
