600 grams Beef (such as shoulder)

1 garlic clove
1 Eggplant
2 Tbsps vegetable oil

400 milliliters Beef broth
250 grams diced Tomatoes (canned)
250 grams chickpeas

Preparation steps

Rinse the meat, pat dry and cut into strips. Peel and finely chop the onion and garlic. Rinse, trim and cut the eggplant into pieces. Saute the meat in hot oil in a pan. Add the onion, garlic and eggplant and cook 2-3 minutes. Season with salt, coriander and cumin and deglaze with the meat stock. Add the tomatoes, cover and simmer about 30 minutes over low heat. Add additional liquid if necessary. Rinse the chickpeas in a colander and drain. Add in during the last 10 minutes of cooking.
