- 1 ⅛ cups Rice
- 1 ⅓ cups cherry Tomatoes (washed and halved)
- ⅓ cup black Olives (stoned and roughly chopped)
- 2 scallions (washed, trimmed and cut into rings)
- 1 Cucumber (peeled, deseeded and diced)
- 1 ⅓ cups Feta
- 4 Tbsps lemon juice
- 1 tsp honey
- 6 Tbsps olive oil
- Sea salt
- freshly ground peppers

COOK THE RICE

Cook the rice according to the package instructions, then leave to cool.

MIX THE SALAD INGREDIENTS

Crumble the feta cheese and put into a bowl with all the prepared salad ingredients and the rice.

DRESS AND SERVE

Add the lemon juice, honey and olive oil and mix carefully. Season to taste with salt and pepper and serve in bowls.
