1 pkg Puff pastry dough (300 grams)
5 Tomatoes
20 Anchovy fillet
50 grams black Olives (pitted)
4 Tbsps olive oil
1 Tbsp herbes de Provence
salt
freshly ground pepper

Preparation steps

1.

Thaw the puff pastry. Cut each puff pastry sheet once into halves horizontally and vertically.

Rinse the tomatoes, cut out the stalks and cut into slices.

Place one slice of tomato, one anchovy fillet and an olive over each pastry rectangle. Sprinkle with herbes de provence and drizzle with olive oil. Season with salt and pepper. Place the pastries over a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 15 minutes until golden brown. Serve hot or cold as desired.
