- 1 stale White roll
- 1 shallot
- 1 garlic clove
- 1 Tbsp vegetable oil
- 1 Tbsp freshly chopped parsley
- 700 grams mixed Ground meat
- 1 egg
- 1 tsp medium hot Mustard
- salt
- peppers (from the mill)
- 20 grams clarified butter

Preparation steps

Soak roll in lukewarm water. Peel and finely chop shallot and garlic; cook over high heat until translucent. Stir in chopped parsley, remove from heat and let cool. Squeeze soaked bread to remove liquid. In a bowl, combine ground meat, egg, mustard, shallot and garlic mixture and bread. Season with salt and pepper.

Form mixture into small meatballs. In a pan, fry meatballs in clarified butter over high heat until golden brown. Reduce heat and continue cooking until meatballs have cooked through.

Arrange meatballs on a platter. Garnish platter as desired with lettuce, pickles, cherry tomatoes, onion rings and parsley leaves.
