- potato cucumber salad
- 800 grams Sweet potato
- 2 onions (finely chopped)
- 6 Tbsps White vinegar
- 200 milliliters Vegetable broth
- salt
- freshly ground peppers
- 1 pinch sugar
- 4 Tbsps vegetable oil
- 1 Cucumber
- For the meatballs
- 600 grams Ground meat (mixed)
- 1 onion
- 1 bay leaf
- 1 egg
- 1 day-old White roll
- 2 Tbsps parsley
- 1 tsp Mustard
- salt
- freshly ground peppers
- clarified butter (for cooking)
Preparation steps

Soak the roll in warm water.

Chop the onion and sauté with the bay leaf in a little hot butter until the onions are soft but not browned. Remove bay leaf and mix the onion with the well squeezed bread, ground meat, egg, mustard and parsley. Mix well and season with salt and pepper.

With wet hands, form patties and cook on both sides in hot butter slowly for about 10 minutes until golden brown.

Cook potatoes in their peels, let cool slightly, peel and cut into slices. Mix with the chopped onions.
5.
Season hot broth well with vinegar, salt, pepper and 1 pinch of sugar. Pour without oil over the potatoes, mix gently and let soak.
6.
Cut cucumber into thin slices and mix with the salad. Mix in the oil before serving. Serve patties with salad.
