22 ozs potatoes
vegetable oil (for frying)
2 sprigs rosemary

Preparation steps

1.

Peel the potatoes. Slice into very fine matchstick strips and pat very dry.
Pluck the rosemary off the sprigs off the woody stems, roughly chop and set aside for seasoning.

Heat the oil in a deep fryer (or a wide pot) to about 180°C / 350°F. To test if the oil is hot enough, dip a wooden spoon into the oil and small bubbles will surround the handle.

Fry the potatoes in portions until golden brown then drain on paper towels.  Season with rosemary and salt. Serve as quickly as possible.
