2 Tbsps olive oil
2 Tbsps butter
250 milliliters room temperature milk
freshly ground peppers

Preparation steps

Peel, rinse and cook potatoes in salted boiling water, about 30 minutes.

Meanwhile, halve leeks lengthwise, rinse thoroughly to remove grit, trim ends and thinly cut crosswise. In a pan, fry leeks in hot oil until golden. Remove from pan and drain on paper towels.

Drain potatoes, let steam evaporate a few minutes, and mash with a potato masher. Add butter and milk and continue mashing until smooth. Mix in leeks and season with salt, pepper and a pinch of nutmeg.
