1 Tbsp lemon juice
100 grams Goat cheese

Preparation steps

Preheat oven to 200°C (approximately 400°F).

Peel and finely chop shallot. Rinse lemon basil and shake dry. Set 8 leaves aside for garnish and finely chop the rest. Halve avocados, remove pits, and scoop out flesh. Cut avocado flesh into chunks, sprinkle with lemon juice and mash with a fork. Mix with shallots, basil and goat cheese and season with salt and pepper.

Toast bread slices in the oven, turning once, about 5 minutes. Spread each piece of toast with 1-2 tablespoons mashed avocado mixture and serve garnished with a basil leaf.
