Toast with Goat Cheese and Tomatoes
Rinse the tomatoes and cut in half. Remove the core and dice. Peel the garlic and chop finely. Toss the tomatoes with the oil, garlic, salt, and pepper. Toast the bread.
Drizzle the bread with olive oil and salt. Cut the goat cheese into quarters. Place the goat cheese on each slice of bread. Spread with the tomatoes and serve immediately. Season as desired with salt and pepper.
