4 handfuls Lettuce (such as oakleaf, arugula , beetroot)
200 grams Goat cheese
4 slices Baguette
2 tablespoons honey
1 teaspoon Walnut oil
salt
peppers
½ dried thyme
½ teaspoon ground paprika (sweet)
30 grams Cashews
100 grams lingonberry (from a jar)
Raspberries (for garnishing)

Preparation steps

1.

Rinse and spin dry lettuce. Arrange on four plates.

Cut goat cheese into 1 cm (approximately 1/2 inch) thick slices. Top bread slices with cheese.

Line baking sheet with parchment paper. Arrange bread slices on it. Combine honey with walnut oil, season with a little salt, pepper, thyme and paprika. Brush cheese with a mixture, toast in preheated oven at 220°C (approximately 425°F) for about 5 minutes or until golden brown. Arrange toasts on lettuce, garnish with cashew nuts and raspberries and top each with about 1 tablespoon of lingonberry. Serve.
