- 4 handfuls Lettuce (such as oakleaf, arugula , beetroot)
- 200 grams Goat cheese
- 4 slices Baguette
- 2 Tbsps honey
- 1 tsp Walnut oil
- salt
- peppers
- ½ dried thyme
- ½ tsp ground paprika (sweet)
- 30 grams Cashews
- 100 grams lingonberry (from a jar)
- Raspberries (for garnishing)
Preparation steps

Rinse and spin dry lettuce. Arrange on four plates.

Cut goat cheese into 1 cm (approximately 1/2 inch) thick slices. Top bread slices with cheese.

Line baking sheet with parchment paper. Arrange bread slices on it. Combine honey with walnut oil, season with a little salt, pepper, thyme and paprika. Brush cheese with a mixture, toast in preheated oven at 220°C (approximately 425°F) for about 5 minutes or until golden brown. Arrange toasts on lettuce, garnish with cashew nuts and raspberries and top each with about 1 tablespoon of lingonberry. Serve.
