500 grams Mascarpone
2 Tbsps sugar
2 tsps Bourbon vanilla powder
1 Tbsp Raspberry liqueur
For the marinated berries
125 grams Red Currants
250 grams Raspberries
125 grams Blackberry
250 grams Blueberries
2 Tbsps Red currant jelly
4 centiliters Currant juice
1 Orange
40 grams shelled Pistachio
1 Tbsp powdered sugar

Preparation steps

1.

For the mascarpone cream, whisk mascarpone with sugar, vanilla powder and liqueur until loose in consistency. Refrigerate. For the marinated berries, rinse currants and remove from stems. Rinse raspberries, blackberries and blueberries if needed.

For the marinade, mix currant jelly with currant juice and orange juice until smooth. Pour marinade over the berries, mix gently and let marinate about 30 minutes. Divide mascarpone cream among 4 glasses, top with marinated berries and decorate with pistachios and powdered sugar.
