150 grams sugar
250 grams Mascarpone
50 milliliters Amaretto
1 egg white
2 large, tart Russet apples
50 milliliters Apple juice
¼ tsp cinnamon
¼ tsp allspice (ground)
50 grams Dark couverture chocolate
40 grams Amaretti cookies (Small almond macaroons)
cocoa powder (for dusting)

Preparation steps

1.

Beat egg yolks in a bowl with 50 grams (approximately 2 ounces) sugar until fluffy. Add mascarpone and 3 tablespoons amaretto and stir. Beat egg whites in a bowl until stiff and fold into mascarpone mixture. Cover and let rest for at least 2 hours in the refrigerator.

Rinse apples, quarter and remove core. Then cut apple quarters into columns.

Heat remaining sugar in a large pot, melt and caramelise until golden brown. Add apple slices and sauté briefly. Add apple juice, cinnamon and allspice and let apples simmer for about 3 minutes. Remove from heat and let cool.

Melt crushed chocolate in a bowl over a warm water bath while stirring. Pour melted chocolate into a freezer bag, cut off a corner to create a fine tip and pipe chocolate in decorative shapes onto a piece of parchment paper. Let cool. Carefully lift chocolate ornaments from parchment paper.

5.

Drizzle almond macaroons with remaining amaretto liqueur. Arrange mascarpone cream and apple slices in dessert glasses and cover with almond macaroons

6.

Serve dusted with cocoa and garnished with chocolate ornaments.
