3 Tbsps white balsamic vinegar

Preparation steps

Toast the hazelnuts in a dry hot pan until light brown and fragrant. Remove to cool and chop finely. Stir the mascarpone with the orange juice until smooth and season with salt and pepper. Whip the cream until stiff and fold in half at a time. Refrigerate.

Rinse the apples, quarter, core and cut into wedges. Rinse the celery and cut into thin columns. Pour the butter into the hot frying pan and fry the celery for 4-5 minutes at a moderate temperature so that it is slightly soft. Add the apples to cook for a few minutes and sprinkle with sugar. Allow to caramelize. Deglaze with the two vinegars.

Serve the apple and celery with the caramel, sprinkled with nuts and drizzled with mascarpone cream.
