1 Tbsp olive oil (extra virgin)
Sea salt
5 slices Bacon (cured)

Preparation steps

1.

Open the oysters and separate the meat from the shells. Pour the lemon juice, olive oil and a little salt into a bowl with the oyster meat for 1-2 minutes.

Remove any fat from the bacon and cut into thin strips.

3.

Place the marinated oysters back into their shells, drizzle with the lemon marinade and garnish with the bacon.

4.

Serve with a glass of dry white wine or champagne.
