Preparation steps

Rinse oysters. To open, take the oysters in hand in a tea towel with vaulted side down, pierce with an oyster knife behind the hinge and open while twisting.
2.
Cut the upper muscle attachment of the shell, remove the top shell, then cut the lower muscle attachment of the shell, leave the oyster water in the lower shell if possible.
3.
Clean the oysters of any shell remains with a finger and place on coarse sea salt or oyster plates. Serve with lemon slices and graham bread.
