Preparation steps

1.

Open the oysters and remove the meat from the shells. Drain the liquor out of the shells and strain it through a sieve. Stir the olive oil into the oyster liquor. Return the oyster meat to the shells. Rinse, quarter and thinly slice the apples. Spread the oysters on a tray and drizzle with the brine mixture. Top with the apple slices.

For serving: Garnish with chervil.
