Preparation steps

Rinse and trim the leeks. Cut into 4 cm (approximately 1 1/2 inch) long pieces, then blanch for 8-10 minutes in boiling salted water. Mix the ingredients for the marinade. Add to a pot with a ladleful of the leek cooking liquid, and warm through.

Transfer the leeks to a bowl, mix in the marinade, and let stand for 2 hours. Once the leeks have finished marinating, serve immediately.
