3 fresh Tomatoes (rinsed and roughly chopped)
½ cup blanched almonds (chopped)
½ cup dark mexican chocolate (chopped)
2 cloves garlic cloves (pressed)
1 onion (peeled and finely chopped)
1 Jalapeño (chili peppers)
¼ cup seedless raisins
2 Tbsps Sesame seeds
1 Tbsp ground cinnamon
1 Tbsp Chili powder
1 tsp Cumin
½ tsp ground cloves
¼ tsp ground cilantro
¼ tsp Anise seed
fresh cilantro (to serve)

Preparation steps

Rinse chicken and pat dry. Cut into 4 to 6 pieces, season with salt and pepper and place in a baking dish.

Place the tomatoes, almonds, chopped chocolate, garlic, onion, chili pepper, raisins, sesame seeds, cinnamon, chili powder, cumin, cloves, coriander, and anise in a blender or food processor. Process until a smooth paste forms.

Combine blender ingredients and 2 cups stock in a skillet. Cook over medium heat, stirring frequently until slightly reduced; adding additional stock if mole sauce is to thick, about 10 minutes.

Preheat oven to 350º F. Brush mole sauce over both sides of chicken pieces. Cook for about 45 to 60 minutes or until juices run clear and chicken is cooked through. Baste frequently with sauce.
5.
Serve hot with fresh cilantro garnish.
