2 ripe red Mangoes
150 grams sugar
1 lemon (juice)
1 generous pinch Cardamom
125 milliliters unsweetened Coconut milk
125 milliliters Whipped cream (at least 30% fat content)
4 Passion fruit

Preparation steps

1.

Peel the mango and cut the flesh from the pit. Cut 1/4 of the flesh into wedges and set aside for garnish.

2.

Place the remaining mango in a blender with the sugar, lemon juice, cardamom, coconut milk and cream and puree. Pour the mixture into several conical shaped metal molds and freeze at least 4 hours.

3.

Cut the passion fruit in half and scrape out the seeds and pulp. Dip the mold briefly in hot water, then invert and turn the ice cream out into bowls, pour the passion fruit over and serve garnished with mango wedges.
