Preparation steps

1.

For mache: Remove any wilted leaves and trim roots. Remove any wilted outer leaves from radicchio. Cut radicchio in half and remove core. Separate radicchio into individual leaves. Rinse endives, trim stem ends, and separate leaves. Remove tough stems from arugula and discard any wilted leaves.

Transfer all prepared salad greens to a large bowl of cold water. Swish gently, and remove from water. Spin dry in a salad spinner. Tear any large lettuce leaves into smaller pieces.

3.

For the dressing: Whisk vinegar with salt and sugar. Gradually whisk in olive oil until emulsified. Toss salad with dressing and serve in a large bowl or divide among plates.
