2 stalks Celery
1 stalk Leeks
1 small Fennel bulb
4 Beefsteak tomato
2 sprigs parsley (leaves)
1 fresh garlic clove
2 tsps oregano (chopped)
800 grams mixed fish fillets (such as bream, bream, John Dory)
300 grams fresh, small Sardine
3 Tbsps olive oil
1 l fish stock
salt
freshly ground peppers
1 Tbsp ground paprika
1 Tarragon
½ lemon (juiced)

Preparation steps

1.

Rinse and dry celery, leek and fennel, cut into thin slices. Blanch tomatoes for a few seconds, rinse in cold water, peel and quarter. Remove seeds and cut into large cubes. Peel garlic and squeeze through a garlic press.

Rinse fish (except sardines) and cut into large bite-sizes pieces.

Heat olive oil in a wide pan and saute vegetables (except tomatoes) and parsley stalks. Add oregano and garlic, season with salt and pepper. Season vegetables with paprika and add fish stock. Add diced tomato, bring to a boil and remove from heat.

4.

Add pieces of fish, sardines and tarragon sprig. Simmer on low heat for about 10 minutes. Remove tarragon and parsley stalks. Drizzle soup with lemon juice and sprinkle with parsley leaves, season to taste.

5.

Transfer to plates and serve with toasted slices of white bread.
