- for the tarragon butter
- 200 grams salted butter
- 1 tsp sliced Tarragon
- 1 generous pinch cayenne pepper
- salt
- peppers
- half lemons (of the juice)

Preparation steps
1.
Boil 10 liters of water (approximately 2.5 gallons). Put the lobsters headfirst into the water individually for 2-3 minutes. Remove from the pot and cut with a large knife lengthwise into 2 halves.

Pierce the breastplate with a knife, then push through. Use the scissors for the rest. Season with salt and pepper.

Put the tail cut-side down in olive oil and heat. Turn and cook in the oven with the meat side up.
4.
The cooking time is approximately 8 minutes.
For the tarragon butter: Beat the room temperature butter with a hand mixer to a frothy white mass. Add in the tarragon, cayenne, salt, pepper and lemon juice. The butter is served separately.
5.
Arrange the lobster on plates and serve with the butter.
