- 1 kilogram waxy potatoes
- 1 stalk Leeks
- 125 milliliters Vegetable broth
- lemons (juiced)
- 1 Tbsp Caper
- 4 Tbsps Canola oil
- salt
- peppers
- ground paprika
- Nutmeg
- Basil (for garnish)
- 250 grams Harzer Cheese

Preparation steps
1.
Peel potatoes, cut into thin slices and boil in salted water for 6-8 minutes until al dente. Trim and rinse leek and cut into thin strips. Place the leeks in a large bowl. Boil the broth and pour over the leeks. Add the lemon juice, capers and oil.

Drain the potatoes, rinse and drain again and add to the leeks. Season the leek and potato salad with salt, pepper, paprika and nutmeg and stir vigorously.
3.
Cut cheese into slices and with the basil, arrange together on top of the salad.
