1 l alcohol
1 kilogram sugar

Preparation steps

1.

Rinse the lemons in hot water, then pat dry. Remove the peel, being careful not to remove any of the bitter white pith. Mix the zest with the alcohol, seal, and let infuse for at least 10 days.

Bring 1 liter (approximately 1 quart) of water and the sugar to a boil. Simmer for 10 minutes, then remove from the heat.

Remove the lemon zest from the alcohol. Add to the syrup, cover, and let infuse for 2 days. Strain through cheesecloth, then mix with the alcohol. Divide into prepared bottles, seal tightly, and store in a cool, dark place. This can be used after infusing an additional 2 days.
