Preparation steps

Rinse lemons in hot water and pat dry. Finely grate lemon peel (without white skin) and squeeze juice from lemon.

Mix sugar, lemon zest, lemon juice and 8 ounces of water in a pot and bring to a boil while stirring. Remove pot from heat and let cool. Pour lemon mixture through a sieve.

Whip egg whites until stiff and fold into lemon mixture. Rinse cucumber, cut in half lengthwise and scrape out seeds. Cut cucumber halves lengthwise into thin strips. Mix cucumber with lemon mixture and pour into ice tray or popsicle molds.

Freeze lemon-cucumber mixture for approximately 1 hour, insert popsicle sticks, and freeze further for about 4 hours.
