Cucumber Smoothie with Lemon Sorbet
Halve the cucumber lengthwise, cut 4 thin slices and lay them aside for garnish. Peel the remaining cucumber, scrape out the seeds and cut the flesh into small pieces. Pluck herb leaves from the stems, put some aside for garnish and chop the rest.
Mix the cucumber with chopped herbs and mash, pour through a strainer or sieve. Season with ginger, salt and pepper. Then add the lemon sorbet and mix. Put the ice cubes into two glasses and pour the smoothie on it. Garnish with slices of cucumber and herbs.
