Preparation steps

Soak the gelatin in cold water until soft, about 10 minutes. In a bowl over a pot of simmering water, beat the eggs and sugar until foamy. Squeeze the excess water from the gelatin and melt in the warm egg-sugar mixture. Add the lemon juice and zest. Remove from the heat and place in a bowl of ice water until it begins to set. Whip the cream until stiff and carefully fold into the egg mixture. Place in a serving bowl or glasses and refrigerate.

Rinse and cut the grapes in half. Rinse the raspberries and pat dry. Serve cold, garnished with mint leaves and the grapes and raspberries.
