Lemon Chicken

Rinse the chicken inside and out and pat dry. Season with salt and pepper inside and out. Finely grate the lemon zest, cut the lemon in half and squeeze the juice from 1 half. Peel the other half and finely chop the flesh. Peel the garlic and finely chop. Toss the chopped lemon flesh with the garlic and 4 chopped sage leaves. Stuff into the chicken and close the opening with toothpicks.
Heat the butter, olive oil, lemon zest and remaining finely chopped sage leaves in a small saucepan. Brush over the chicken. Place the chicken, breast-side down, in a roasting pan and roast in a preheated oven at 200°C (approximately 400°F) for about 35 minutes. Flip the chicken over, drizzle with lemon juice and roast for another 15 minutes, until the skin is crispy.
