- 200 grams Leeks
- 50 grams unsalted, shelled Peanuts
- 1 ½ centimeters fresh ginger
- 300 grams jam sugar (2:1 ratio)
- 150 milliliters White vinegar
- 1 tsp sweet ground paprika
- salt
- freshly ground peppers

Preparation steps

Cut off peel and white pith from oranges. With a sharp knife, cut out orange segments. Rinse and trim leeks, shake dry and cut crosswise into rings. Toast peanuts in a frying pan. Remove and set aside.

Peel and finely grate ginger. In a pot, combine orange segments, sugar, leeks, peanuts, ginger, vinegar and paprika. Season with salt and pepper and add 150 ml (approximately 2/3 cup) water. Bring to a boil, reduce heat to medium and simmer about 10 minutes. Remove 4 tablespoons of mixture and set aside. Puree remaining ingredients.

Add reserved mixture to relish. Fill sterilised jars with relish and seal tightly. Let stand 5 minutes, then invert and let cool in a dark place for 2 weeks before using.
